Ingredients

40 min
3-4 bowls
  1. 200 grtender leaves of spinach
  2. 1small potato
  3. 1small onion
  4. 4 clovesgarlic
  5. 10black pepper corns
  6. 1bay leaf
  7. 1 tbspoil
  8. 1/2 tbspchana flour
  9. 1/2 tspsalt
  10. 1feastfull of coriendar leaves

    Wash and clean spinach. Take it in a bowl. Add boiling water to it. Cover and keep aside for a min. Then shift it to chilled water. Cut potato into small chunks. Roughly crush garlic. Roughly crush ginger. Keep aside everything.

    Heat up oil in a pan. Add the bay leaf and the pepper corns. Add garlic and onions. Fry onions till they are translucent. Add potatoes and salt. Combine well, cover and cook till the potatoes are almost done.

    Drain the spinach from chilled water and add in here. Add ginger too. combine well, cover and cook for 3-5 min. Add coriendar leaves. Let the mixture cool down a bit. Grind smooth it using some water as needed.

    Heat up butter in a pan. Fry chana flour a bit. Add water a little at a time and stir thoroughly. Bring it to boil. Add spinach puree in here. Adjust consistency and salt. Sprinkle black pepper powder as per your taste. Simmer it for a minute or two. Remove scum from its surface. Turn off the stove Serve hot!
