Banana Pancakes
Everybody loves pancakes. Well, mostly. This particular recipe is not very different from the regular ones but I made it without any baking powder/soda and tried some variation while cooking the cakes.
Cooking Instructions
- 1
Beat the eggs, sugar and butter together.
- 2
Add yoghurt and milk to the mixture and blend them well.
- 3
Add the flour to the mixture as you blend. In the end, add the cardamom powder (you can add cinnamon as well) and squeeze in the lemon juice.
- 4
Heat a non-stick pan and spread little oil on it.
- 5
Cut the bananas into thin, round pieces and keep aside.
- 6
Cooking Style 1 - Pour the batter on the pan and arrange the banana pieces on top of the batter in any way you like. (To ensure even cooking, I put all the pieces in the centre)
- 7
Cover the pan and cook for a minute or till bubbles start appearing on top of the batter.
- 8
Using a spatula, turn the cake upside down. Cook for a minute and remove from the pan.
- 9
Style 2 - Over the oil coated pan, arrange the banana pieces however you like. Pour the batter on top of the pieces, covering them completely.
- 10
Turnover the cake after a minute or so and cook the other side.
- 11
If you follow style 2, the pancakes will have the bananas stuffed inside and in style 1, you can taste the fried bananas on top of the pancake.
- 12
Serve your pancakes with maple syrup or honey.

Extra Fluffy Banana Pancakes Extra Fluffy Banana Pancakes
We had extra bananas that didn't get eaten before starting to brown and no one in my house will eat them with brown spots. I didn't want to make banana bread again and it was breakfast time. I looked up banana pancake recipes, but they all looked so flat and dense. I also didn't want am overwhelming banana flavor which I think something that is just "bananas and eggs" would be. So, I decided to just modify my go-to pancake recipe with bananas as the base and they turned out great. On a side note, this is a great recipe to let the kids help with! My 3 year old loves spending time cooking with Mama. He feels like a real chef when he's cooking and guiding him through the measuring and mixing of ingredients while explaining what each ingredient does is a great way to teach him math and science at the same time. Buttermilk Pancakes Buttermilk Pancakes
While watching TV, I saw a restaurant that served pancakes using buttermilk powder and it looked so delicious, so I decided to try to make some myself. If using plain yogurt, decrease the amount of soy milk or regular milk. When pouring the batter into the pan, form it into a neat circle so that it will be soft. Instead of baking soda, you can use 1-2 tablespoons of carbonated water to create a springier pancake. In that case, decrease the amount of soy milk. Recipe by keiO3 cookpad.japan -
