Ingredients

  1. 750 gonions (thinly sliced) / 26½ oz.
  2. 250 gpotato (small chunks – skin on) / 9 oz.
  3. 1 litrechicken / vegetable stock 34 fl. oz.
  4. 250 mlmilk skim / 8½ fl. oz.
  5. 2 teaspoonsgarlic powder
  6. 2 teaspoonsaspartame
  7. ½ teaspoonblack pepper ground
  8. chives chopped

Cooking Instructions

    Microwave the onions for and potato for 8 minutes to soften.

    Put a large lidded pan on a high heat and add the stock and skim milk. Add the microwaved onions and potato and turn turn to medium / low. Season with the garlic powder and pepper.

    Gently simmer for 20 minutes. Add the aspartame and stir through. Liquidize until no “bits” are visible and liquidize again for the same time to ensure all the onion is integrated.

    Serve immediately or chill/freeze and reheat. Scatter with the chopped chives as a garnish when serving.
