I was getting tired of getting under-flavored, boring, or just not good guac from the store and HATE paying for special table side guac and being disappointed. This recipe is my solution.

Ingredients

  1. 7ripe avocados
  2. 1/2serrano chile, seeded, stemmed, and finely diced.
  3. 1poblano pepper, seeded, stemmed, and diced
  4. 1 bunchcilantro, chopped
  5. 1/2minced red onion
  6. 2 tbsplime juice
  7. 1 tspfreshly cracked pepercorns
  8. 1 tspMediterranean sea salt
  9. 4roma tomatoes, seeds and pulp removed, chopped

Cooking Instructions

    Grip an avocado gently on one side with your hand. Using a large, sharp knife in the other hand, cut the avocado lengthwise around the seed. Open the two halves to expose the pit.

    Gently tap the pit with the knife with enough force so that the knife edge wedges into the pit, but not so hard as to cut all the way through.

    Test the knife remove the pit and discard.

  4. 4

    Scoop our the flesh of the avocado and place in mixing bowl.

  5. 5

    Using a fork, roughly mash the avocado. (Don't overdo it! Guacamole should be a little chunky.)

  6. 6

    Add the rest of the ingredients (prepared as noted in the ingredients) and stir to combine. NOTE the salt and pepper are to taste.

    Serve immediately or cover and refrigerate until serving.
