🍲Vegetable Fried Rice 🍲

Better than take out vegetarian (and vegan) vegetable rice !
The secret to this delicious fried rice is using brown rice ( I used basmati brown rice). As opposed to white rice which usually lacks vital nutrients, brown rice is higher in iron, phosphorus, potassium, magnesium and fiber. Many people aren’t a fan of it because it’s its nutty flavor and chewier texture but the sauces added to this recipe balance out those qualities, and creates a perfectly delicious rice.
Iron: crucial for oxygen transport throughout the body.
Phosphorus: builds and maintains strong muscles.
Potassium: regulates heartbeat and helps muscles contract.
Magnesium: needed for bone health, supports nerve function and regulates blood sugar.
Fiber: aids in digestion, blood sugar regulation and keeps you feeling full for longer.

Assemble all ingredients.

In a pan over medium heat, add 2 tbsp of olive oil and add carrots. Sauté until tender (3-4 minutes)

Add the peas and corn kernels and cook covered for another 3-4 minutes.

Add 1 cup of cooked brown rice and cook for 2-3 minutes. Then add soy sauce, sesame oil and black pepper. Cook for 1-2 minutes more.

Serve warm. Yum !
