Slice pork into thin strips.

Cut lemongrass into thin slices. Place lemongrass, garlic, shallots into food processor and chop until finely minced. You can also mince by hand.

Combine pork, lemongrass, garlic, and shallots along with all of the other ingredients in a bowl and mix well. Marinate for at least 1 hour or overnight.

Spread out pork on a tray and air fry on 425 degrees for 10-12 minutes, flipping half way. Remove when the pieces are charred on the edges. Or heat a skillet with 2 tbsp neutral oil and cook pork on medium high heat, flipping after one side is caramelized. Do not overcrowd the pan or pork will not char.

Serve with vermicelli, rice, banh mi, or whatever floats your boat!
