This is the cake which was my first learning recipe from my all time teacher mother. It is so simple and best tasted cake for me. So today in Teachers day I am sharing her recipe of simple cake with some dry fruits.

Ingredients

30- 35 minutes
3-4 servings
  1. 4eggs
  2. 1+ 1'2 cup All purpose flour or Maida
  3. 1 cupregular sugar
  4. 1 cupvegetable oil
  5. 1 tspvanilla essence
  6. 1+ 1/2 tsp baking powder
  7. 2 tbspgolden raisin
  8. 2 tbspchopped nuts like peanut/cashew
  9. 1 tspflax seeds
  10. 2 tbspmilk (optional)

Cooking Instructions

30- 35 minutes

    Beat sugar and vegetable oil in a mixing bowl with hand blender till the mixture becomes creamy.

    Add eggs and whisk again with the hand blender for 3-4 minutes. Don't over beat. My mother uses to beat with fork.

    Add vanilla essence and mix.

    Sieve together flour and baking powder separately.

    Add the dry mixture to the egg mixture.

    Mix lightly with cut and fold method.

    Add some raisins and chopped nuts. Keep some raisins and nuts separately for garnishing.

    Mix lightly.

    Grease and line a 9 inch diameter round cake tin.

    Preheat oven at 180 degree Centigrade for 10 minutes.

    Check the consistency of the batter. It should be thick but pouring consistency. Add little milk if the batter is too thick.

    Pour the batter in the prepared tin.

    Garnish with some raisins, nuts and flax seeds.

    Bake for about 30 to 35 minutes or till a knife or toothpick inserted comes out clean.

    When the cake cools down, de mould and cut in desired shape.

    Enjoy with a cup of tea.
