Ingredients

  1. 1onion
  2. 5parsnips
  3. 2potatoes
  4. Teaspoonground cumin
  5. Teaspoonchili powder
  6. 2cardamom pods
  7. 1 teaspooncumin seeds
  8. 1 teaspoonpaprika
  9. 1chopped apple
  10. 1 tablespoonolive oil
  11. 1veggie stock cube
  12. Pintwater
  13. 1 teaspoonbrown mustard seeds. Optional
  14. Salt and pepper

Cooking Instructions

  1. 1

    Add all the veg chopped. No need to peel root veg. Heat pan and start to dry fry.

    Add spices and oil.

  3. 3

    Chilli and salt and pepper.

  4. 4

    Continue to fry until veg is coated and golden.

  5. 5

    Add stock and water and mustard seeds.

  6. 6

    Simmer for 20 mins until veg soft.

  7. 7

    When cooked blitz with hand blender.

  8. 8

    Serve with warm pitta and s sprinkle of cayenne pepper. Enjoy.
