#nov #w1 - Broccoli contains a lot of vitamins, minerals, and fiber. It also has antioxidants, is good for the heart, improves digestion, and also aids in weight loss. Chickpeas, on the other hand, is rich in dietary fiber and calcium, controls sugar level, and promotes weight control. So this healthy soup is an ultimate winter treat, is simply divine and very comforting. Garnish well and enjoy it with some croutons or breadsticks for a wholesome one-pot meal / light dinner.

Ingredients

15 minutes
2-3 servings
  1. 1 cupbroccoli florets
  2. 1 cupboiled chickpeas
  3. 2 tspolive oil
  4. 1 tspbutter
  5. 1cinnamon stick
  6. 2bay leaves
  7. 1onion, sliced
  8. 3-4garlic cloves
  9. 1-2green chilies
  10. 1stock cube
  11. 1 tsp.curry powder
  12. As Per TasteSalt
  13. 2-3 cupswater
  14. pinchpepper powder
  15. pinchred chili flakes
  16. 1 tbspbeaten yoghurt
  17. 1 tspchopped pistachios
  18. 1 tspcoriander leaves, chopped
  19. 1 tspolive oil

Cooking Instructions

  1. 1

    Heat 1 tsp. oil and sauté the broccoli florets slightly. Keep aside. Heat the remaining oil and butter. Temper with cinnamon stick and bay leaves.

    Add the onion, garlic, and green chilies. Stir fry for a minute. Add the curry powder, stock cube, salt (opt), boiled chickpeas, sautéed broccoli (keep aside a few to garnish) & 2-3 cups water.

    Pressure cook for 2-3 whistles. Set aside to cool down. Discard the cinnamon stick and bay leaves. Blend it and heat again. Adjust the consistency. Add more water if preferred.

    Garnish with pepper powder, red chili flakes, sautéed broccoli, chopped coriander leaves, beaten yogurt, olive oil & chopped pistachios.
