材料

  1. Bread flour(a) 120g
  2. Cake flour(a) 80g
  3. Whole wheat flour(a) 50g
  4. Sugar(a) 10g
  5. Salt(a) 2g
  6. Water 162g
  7. Yeast 2g

作り方

  1. 1

    Put yeast into water.wait about 1 minute

  2. 2

    Mix ingredients of group( a)1min by mixer.

  3. 3

    In winter,warm water is best.In summer cold water is best.

    put ①and mix together by mixer(kitchen aid speed 2)10min

  5. 5

    1st proofing in hot area about 40-50min:about 2times bigger

  6. 6

    Keep in the bowl and covered by clear film or wet towel

  7. 7

    Punch out gas from dough.
    Roll up.

    Bench time 15mi
    Covered by wet towel

  9. 9

    Put flour in the strainer basket

  10. 10

    If you want to mix cheese,nuts,or dried fruits,roll up.

    Re Roll up with punch out a littlePut dough bowl upside down

    2nd proofing
    covered with wet towel at hot area

    About 30min at hot area ( about 2times bigger)

    Preheat oven to 485℉ with pan and bowl

  15. 15

    Put flat pan and bowl (that able to cover dough bowl size)

    Remove from basket.Stay on cutting board with baking paper

  17. 17

    and cut top of dough to cross by knife

  18. 18

    Grab hot bowl from oven Slide dough with bakingpaper to oven

  19. 19

    Cover dough by hot bowl and close door of oven
    Bake 10min

  20. 20

    Remove bowl from oven and down temperature to 445℉
    Bake15min
