My son wanted cod because he didn't like it before. Since he got over his pickiness, he asked me to make fried cod :-)

作り方

Check the fish to remove any bones if needed.

Place the fish on the tray.

Season lightly on both sides with salt. Let it sit 10 mins.

Use a paper towel to dry the pieces on all sides.

Prepare the breading station.

Combine the flour/old bay/garlic/onion powder on the tray.

Prepare egg wash and panko on the tray.

Coat the fish with flour, then dust off any excess flour.

Dip the fish into the egg, then allow the excess to drip.

Coat the fish in panko, pressing it for it to stick

Repeat for the rest of the fish.

Set the wire rack lined with paper towels underneath.

In a deep skillet, heat a 1/2 inch of oil to 350°F.

Gently place 1-2 piece of cod into the oil.

NOTE: To maintain the oil temp, do NOT overcrowd w/ the oil.

Fry the fish until golden brown on both sides.

NOTE: Only flip your fish once while frying.

Transfer the fish to the rack and leave them for 5 mins.

Serve with tartar or make your own sandwiches!
