Lemon bars have a buttery crust and are sweet and delightful square tarts. Freshly squeezed organic lemon juice and zest are the key ingredients for this recipe, and a classic shortbread crust adds a tasty texture and some contrast for every single bite :-)

Gather all the ingredients.

Center a rack in the oven and preheat to 350F.

Line a baking pan with parchment paper and set aside.

NOTE: leave the paper hanging on one side for easy removal.

Whisk flour in a small bowl.

Add butter and sugar in a large mixing bowl.

Use dough/bowl scraper to mix it all together.

Add flour/vanilla and mix until just combined.

NOTE: Do not overmix the dough, mix until it just combines.

Transfer the dough to the baking dish.

Press the dough into a flat even layer.

Bake for 15-18 minutes or until slightly brown on the edges

Remove from the oven, and leave the oven on.

Set aside until filling is ready.

For the filling:

Whisk together sugar and flour in a large bowl.

Whisk in eggs, lemon juice and lemon zest.

NOTE: Make sure all ingredients are fully incorporated.

Pour the filling onto the warm shortbread crust.

Bake for 25-30 mins or until the filling has just set.

Let it cool completely on a wire rack.

Chill in a fridge for at least 2 hours.

Lift the parchment paper off the dish, cut into squares.

Dust with confectioner's sugar. Serve.

NOTE: Do NOT rush the chill time to set up the bars.

For the best results for the shortbread crust, I highly recommend using Irish butter.
