Maple Muffins

Maple syrup is a natural, sweet syrup made from the xylem sap of sugar, red or black maple trees. The main maple-producing areas are concentrated in the northeastern corner of North America. This recipe uses maple syrup to add a rich, caramelized flavor to the muffins :-)

Preheat oven to 375F.

Line a muffin pan with paper liners.

In a medium bowl, whisk flour/BP/BS/cinnamon/salt together.

Whisk rest of the ingredients together in a large bowl.

Add dry ingredients into the wet ingredients.

Whisk gently until combined. Do not over mixed.

Divide the batter evenly between the muffin cups.

Lightly sprinkle the tops of the muffins with sugar/cinnamon

Bake for 15-20 mins or until the tooth pick comes out clean.

Remove from the oven, let them cool in the pan for 10 mins

Transfer the muffin to a wire rack to cool it completely.

Serve with a pat of butter or spread with jam :-)

Feel free to add some chopped walnuts, pecan or oats for extra texture.
