mix plain flour, baking powder and sugar in a bowl

puree the pineapple in a blender and add to the flour mix with apple juice, egg whites, vanilla extract and lemon zest, stir well

then add dried cherries or raisins, the mixture should be sloppy

grease muffin cases then spoon mixture in and bake for 20 - 25 minutes until golden gas mark 6 200°c
- 5
leave to cool. heat jam in saucepan then brush on top of muffins to glaze. sprinkle with a little icing sugar before serving
