- green mussel (wash and remove the somewhat hair part of the mussel, if bought fresh we usually soak it in running water for a few hours. This will allow Live mussels emit whatever impurities) • water • baby spinach or moringa leaves (you can also use bok choy) • peeled and crushed organic ginger • crushed garlic • diced shallots • aroma tomatoes • fish sauce (you can choose kosher salt if you don’t like fish sauce) • cracked pepper • cubes italian squash (I started using this when I arrived to the US. Optional) • oil • jalapeño or Thai chillies (optional)

- whole Bangus (milk fish) you can also use other fish like 4-6 PCs scad. Clean wash, sprinkle with 1/2 tbsp kosher salt • oil • crushed garlic • sliced sweet onion or shallots • bay leaf • white cane vinegar • whole peppercorn • sliced ginger • fish sauce use salt if you do not like fish sauce • eggplants or bitter gourd (if you use eggplant do not cut it ahead of time as it will get brown if you will use bitter gourd remove the inside, slice and soak in water with salt and add it lastly • water • red chillies or jalapeños (optional)

- whole chicken (typical whole chicken will have 12pcs 2 wings, 2 legs, 2 thighs, 4 breast and 2 back bone) • hard boiled eggs, remove shells and set aside • crushed garlic • sweet onion • bay leaves • oregano • Soy Sauce I use either UFC or silverswan • vinegar I use either Lorins or UFC or mama sita cane vinegar but it’s hard to find • peppercorn • Knorr seasoning (optional) • mushroom sauce (optional, if you want your adobo darker) • garlic powder (optional: I add this for flavor but at home we don’t) •

- pork (you can use pork ribs, pork butt or pork belly) rub salt and wash. I typically like to soak my pork with vinegar and salt for at least 30mins then I wash again, set aside • stock or water. When I was younger whenever we cook Sinigang. We cook rice first. We wash the rice 3x before cooking. The 2nd, we wash the rice. we set aside that liquid and use that • diced tomato Roma. You can use cherry tomatoes if you like • bay leaf • oregano (optional) • crushed garlic • oil • sweet onion • Sinigang mix (you can get from Asian store. At home we use fresh young tamarind for the sour taste) • Veggies of your choice you can just use 1 or 2 kinds of the following (Okra, Kang-kong, ice berg, string beans, daikon, mustard leaves etc) • fish sauce or you can just use salt and pepper, I know some people don’t like Fish Sauce • ginger crushed or julienne whichever is easier for you
