Ingredients

2-4 person
  1. 2 lbsgreen mussel (wash and remove the somewhat hair part of the mussel, if bought fresh we usually soak it in running water for a few hours. This will allow Live mussels emit whatever impurities)
  2. 2-3 cupswater
  3. 1 cupbaby spinach or moringa leaves (you can also use bok choy)
  4. 1 tsppeeled and crushed organic ginger
  5. 3 PCscrushed garlic
  6. 1/4 cupdiced shallots
  7. 1-2 PCSaroma tomatoes
  8. 1 tbspfish sauce (you can choose kosher salt if you don’t like fish sauce)
  9. 1/4 tspcracked pepper
  10. 1 PCcubes italian squash (I started using this when I arrived to the US. Optional)
  11. 2 tbspoil
  12. 1-2 PCsjalapeño or Thai chillies (optional)

    Heat oil

  2. 2

    Add ginger until you can smell the gingery scent in the air.

  3. 3

    Add garlic until lightly brown

  4. 4

    Add shallots wait until it’s translucent

  5. 5

    Add tomatoes until properly sautéed (if you have time remove the seeds of tomatoes filter on a strainer. I add the juice and throw the seeds)

  6. 6

    Add cleaned/washed/soaked green mussels. (Where I live now it’s hard to find fresh seafood so I buy New Zealand green mussels)

  7. 7

    Add fish sauce and starr the timer between 10- 12 minutes

  8. 8

    Add water and simmer

  9. 9

    Add veggies, little salt and pepper to taste and jalapeño

  10. 10

    Serve warm with rice. You can eat by itself or serve with baguette. Very delightful soup.
