Beef stew, with matoke

Cooking Instructions

Boil the meat till tender and set aside.

Clean your onion and chop. Then fry the onion till brown. Add your cleaned and chopped tomatoes.

Clean and cut the dhania and add to the mixture. Stir and cook for two minutes.

Add the meat without the stock and cook for five minutes. Then add the stock.

For the matoke and the Irish potatoes, peel and chop then clean.

Fry your onions till brown, add tomatoes.

Cook for two minutes then add the beef cube. Add two cups of water then add your mixture of both matoke and the Irish potatoes. Boil till well cooked.

Then serve

This stew is my own combination of some beef stew recipes I knew. With ketjap as a major component, I think it would classify as Indonesian. Though alternatives like soy sauce would probably also work, and make it less Indonesian.It is a fairly easy recipe, but it needs some time to stew. It works especially well with fries or other potato dishes.Due to the fact that my preferred binding agent is starch it is also gluten free, in contrary to some stews. Starch has the added benefit that it can be added at the end, because unlike flour it does not have this raw taste.Rik

I must admit this recipe is really for a beef pie, but the insides where so good, why not just have the insides!! I think it qualifies for stew!! You can cook the first part in a skillet but you do need a Dutch oven to complete it. It is rather fiddly to make but I guarantee you'll be happy with the results. Props to my hubby as well for the photography as usual!! kokomayla -
