Chickpea Butter 🍯Honey Cinnamon Chickpea Butter 🍯Honey Cinnamon
This recipe is adapted from a Honey roasted chickpea butter found on the internet which I tried long ago but did not like the rather dry and coarse texture as there was no melted chocolate to cream it up. So I remade it with both roasted chickpea chunks and boiled chickpeas for the creamy butter texture (kinda like hummus) and seasoned it with cinnamon and honey.#vegetarian#vegan#plantbased#healthyfood Tunarap -
Colorful Cajun rice Colorful Cajun rice
#Win #Week9 #Jan #W3Couple of years ago, I gave a lecture at the University of Louisiana. New Orleans. Cajun is an ethnic group in French speaking Louisiana. Louisiana cuisine is almost like our hometown cuisine. Recipes include rice, spices, hot chili peppers. We dines at the very popular chef Emeril Lagassi ‘s restaurant. He made Cajun rice for us without the meat. Aromatic flavorful spicy hot rice with lots of vegetables. We loved it. For the first time I cooked it in my very own kitchen. time. A fusion recipe with Indian flavor. Instead of parsley I added coriander. Cajun rice is also popularly knows as dirty rice as the meat and fishy sauce included give the rice a dirty brown color. My recipe is not dirty; I didn't add meat or fish sauce. This is the vegetarian version of Cajun dirty rice Lakshmi Sridharan Ph D -

Soy Balsamic Rosemary Lemon Marinade Soy Balsamic Rosemary Lemon Marinade
The rosemary and lemon zest make this marinade a great complement for the somewhat grassy and gamey flavor of lamb, but it's also great for dark meat chicken, pork chops, and beef (we especially love it with tritip!).As always, one of the most effective methods for even marinating is to put your protein in a Ziploc-type bag, pour your marinade in, coat the protein, suck all the air out of the bag before you seal it so that the bag clings to the protein, and then lay it flat in the fridge, flipping it over halfway through the marinade time. (Except in the case of something like rack of lamb where all the muscle is on one side, in which case, just leave the meat side down.)If I have a considerable about of marinade left, I often like to make extra sauce of it by bringing it to a gentle boil on medium high heat for about 1 minute with about a Teaspoon of oil (and maybe also a Tablespoon of brown sugar), and then bring the heat down to low and simmer for another 3 or 4 minutes before cutting the heat. I then just spoon it over the meat before serving, and that extra punch of flavor always goes over well. x -
Moist and Spicy Squid Kimchi Tossed With Gochugang Moist and Spicy Squid Kimchi Tossed With Gochugang
In Korea, this dish called "ojingeo bokkum", is not, in the true sense of the word, a "kimchi" dish. I had it served to me as a child, and I never forgot the taste. As an adult, when I realized it was ojingeo bokkum, I was thrilled! Ever since, I've been enjoy it homemade. It's delicious even without the gochujang. It stores well in the refrigerator for about a week; after that, the water and oil start to separate. When your appetite is weak, it may taste salty, so adjust the taste to your liking. Spinach with Sesame Seed Side Dish Spinach with Sesame Seed Side Dish
・ While spinach is a winter vegetable, it's generally available year-round to enjoy as a seasonal dish at any time.・The ceramic bowl shown in the photo is a Mishima rice bowl made by Mutsuhiko Shimura. It's a perfect size for side dishes, and the natural pattern, gloss, and deep green-tinged color make it an attractive dish for colorful items.・ When parboiling the spinach, if the leaves are boiled for too long, they will lose their texture, and the color will darken.・ To drain the excess water from the spinach, after parboiling, thoroughly squeeze the excess water with your hands. If it's too watery, the flavors will not hold. For 2 servings. Recipe by Ta-Ke-O cookpad.japan -
Rhubarb Compote Rhubarb Compote
My dad gave me a HUGE bunch of rhubarb from his garden so I wanted to use up a lot. This is one of the easiest ways I know - just stew the rhubarb with sugar or honey (as much as you like really). I heard it was good with cloves and star anise so I threw those in too, but you could do it plain or throw in some strawberries, apples, etc.Enjoy on bread, with yogurt, ice cream or anything else that sounds good with a tart & sweet sauce :) Felice
