Couple of years ago, I gave a lecture at the University of Louisiana. New Orleans. Cajun is an ethnic group in French speaking Louisiana. Louisiana cuisine is almost like our hometown cuisine. Recipes include rice, spices, hot chili peppers. We dines at the very popular chef Emeril Lagassi ‘s restaurant. He made Cajun rice for us without the meat. Aromatic flavorful spicy hot rice with lots of vegetables. We loved it. For the first time I cooked it in my very own kitchen. time. A fusion recipe with Indian flavor. Instead of parsley I added coriander. Cajun rice is also popularly knows as dirty rice as the meat and fishy sauce included give the rice a dirty brown color. Ingredients

  • 1 cuprice, cooked
  • 2 tbsp oil (olive oil)
  • 1 cup celery, finely chopped
  • 1 cup mushrooms thinly sliced
  • 1 cup red chilli flakes
  • 1 cup grated onion small pieces
  • 1 cup onion finely chopped
  • 1 teaspoon garlic puree
  • 1 jalapeno pepper
  • requiredSalt
  • Worchestire sauce stock
  • 2 cups apple cider vinegar
  • ½ cup soy sauce
  • 1/4 cup light brown sugar
  • 1/2 teaspoon cinnamon powder
  • 1 teaspoon ground mustard
  • 1 tsp ginger paste
  • 1 teaspoon onion powder
  • 1 clove of garlic mashed
  • 1/2 teaspoon ground pepper powder
  • Cajun Spice Powder:
  • 2 tablespoons paprika
  • 1 tablespoon of chili powder
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon pepper
  • requiredSalt
  • 1/2 lemon

    I cooked the rice in an electric rice cooker, it is quick. And rice comes out nice and fluffy. When rice cooking take care of the rest of chores

    (Worchestire Sauce) Worchestire Sauce Stock: Bring ingredients to a boil in a saucepan over medium heat. Stir to prevent sticking and then turn off the stove and let it cool down after boiling. Strain, then store in an airtight bottle and refrigerate, good for up to 3 months.

    To make the Cajun Spice Powder: Combine the ingredients in a bowl and mix

    Remove the stem of the mushroom and rinse under running water. (Do not throw away the stems. Use for stock when needed) Cut the
    vegetables into small pieces
    In a heavy bottomed pan over medium heat add oil, 2 tbsp oil. Add onions and garlic; sauté until transluscent. Add a pinch of salt and stir. 2-3 minutes. Add mushroom, chili pepper, celery and Jalapeno and stir. Jalapeno is hot

    Stir in 1 tablespoon cajun spice powder and 1 tablespoon orcester sauce. Let the vegetables become soft. lower the fire

    Add rice and stir. Mix all the ingredients together. Add coriander, green onion and stir. Taste; Add salt if necessary and stir. Delicious nutritious aromatic Cajun rice is ready.
