Warming Carrot & Parsnip Soup 🥕

Sonia @sonia
I had a bag of carrots and a bag of parsnips that desperately needed using up. I wasn’t going to enter this into the comfort food challenge but as it was cooking the smell was just amazing. And it made me happy, I love autumn and this soup really is like a hearty (albeit healthy) hug 🤗
Cooking Instructions
- 1
Gently fry the onion in olive oil for ten minutes. Add in the garlic and the chopped veg. (Ignore the pepper in the photo I decided against adding that in 😆)
- 2
Give it all a stir and keep cooking for another ten minutes items.
- 3
Pour in the stock and add your rosemary stalks. Put the lid on the pan and cook y til the veg is very tender (30-40 minutes).
- 4
Remove the rosemary stalks then blend until smooth.

What can I say, I'm a sucker for this soup, it's heavenly. And way simple to make. I paired my soup with some steamed rice, baked potatoe wedges and some fried butter chicken breast... Please don't frown at the lack of veggies on my plate 😁#authormarathon

Butternup Soup
I am loving that Malawi is experiencing a prolonged winter (or at least my city, being in the mountains), otherwise, I wouldn't have had the chance to make my favorite velvety butternut soup before the heat returned. This is what I call a comforting classic, perfect for any season. Each spoonful is rich, creamy, and nourishing, offering a delightful balance of hearty yet light flavors. I consider it a winter treat because I usually serve it as a wholesome meal rather than just a cozy starter—I simply don’t need anything else after enjoying it.So there you have it, my #GlobalApron challenge ingredient of choice this round is butternut 😊

Chicken Udon Noodle Soup
As June ends, we are closing soup season in Malawi. What I love about a great soup is the balance in flavors, even with a multitude of ingredients mixed together. If I’m being honest, lemons are behind that balance. So, for #GlobalApron this week, I chose lemon as my star ingredient. Though largely invisible, it provides the much-needed balance in our culinary endeavors.
