Ingredients

4 servings
  1. Soup
  2. 1 tbsvegetable oil
  3. 1medium sized onion
  4. 1 clovegarlic minced
  5. 3 tbschopped ginger
  6. 453 gmscarrots, diced
  7. 2medium size potatoes
  8. 4 1/2 cupsvegetable stock(recipe forthis is in my previouspost
  9. 1 3/4 cupscoconut milk
  10. 1/2 tspsalt
  11. Garnish
  12. Handfulspinach
  13. 2chopped carrots
  14. Bread buns

Cooking Instructions

  1. 1

    Add oil in a sufuria, once hot add in the onions, garlic and ginger, cook till fragrant, for about 5min.

    Add in the carrots and vegetable stock and bring to a boil, around 4min

  3. 3

    Reduce heat to simmer and cook the carrots till soft, around 25min

  4. 4

    After 25 min, proceed to add the coconut milk and let this simmer for 5 min.

  5. 5

    Finally remove from heat and proceed to blend the soup, do so in batches.

  6. 6

    Serve while hot with a slice of buttered bread, so delicious, enjoy 😊
