Cooking Instructions

Add olive oil in a large cooking pot and heat over medium heat. Season chicken breasts on both sides with salt and pepper. Add chicken to the cooking pot and cook 3-4 minutes per side, until golden brown and cooked through. Set chicken aside on a plate.

Add onion, carrots, zucchini, peas and garlic. Cook, stirring often, until soft, about 3 minutes.

Add water and royco cubes, using a wooden spoon to scrape up any browned bits in the bottom of the cooking pot. Bring to a boil.

While soup is coming up to a boil,cut chicken into cubes or shred using two forks. Reduce heat and simmer 10-12 minutes.

Stir in lemon juice and fresh parsley. Taste and adjust seasonings if necessary.

I am not a big croc-pot user, so I decided to try to come up with something inspired from the recipe i saw online. I saute the vegetables before putting in soup to save time. It came out very good.
