Easy Refreshing Sweet Onion and Tomato Salad

This is a copycat recipe of the tomato salad that a Genghis Khan (BBQ sliced lamb) restaurant serves. My husband, who does not like fresh tomatoes, loved it. And, he said it was better than the one at the restaurant.

If you use sweet onions, they should not be too sharp tasting, but if you'd rather not have any sharpness, soak them in water to mellow the flavor. If you have enough time, chill the tomatoes on a plate in the refrigerator until icy cold, then enjoy. Recipe by Momonoyasashiikaori

Ingredients

2 servings
  1. 2Tomatoes (medium)
  2. 1/4Sweet onion (medium)
  3. 1 tbspVinegar
  4. 1 tbspSugar
  5. 1 tspSoy sauce
  6. 1 tspVegetable oil
  7. 1/2 tsp● Salt
  8. 1for garnish Dried dried parsley or ao-nori seaweed

Cooking Instructions

    Finely chop the sweet onion, soak in water and drain. Combine the sweet onion with the ● ingredients. If the onion is not too sharp, you don't need to soak it in the water.

    Slice the tomatoes, and pour on the dressing from Step 1. If you have some extra time, chill them in the refrigerator, then enjoy.
