Ingredients

  1. 1 cupFrench beans, washed and cut into half centimetres pieces
  2. 1 cupcarrots cut in cubes
  3. 1 cupcauliflower cut into small florets
  4. 1 cupgreen peas shelled and boiled
  5. 1 cuppaneer cut in to cubes
  6. For masala (gravy), 2 medium onions cut in pieces
  7. 2big tomatoes cut into pieces
  8. 12-15cashewsnuts
  9. 4 podsgarlic
  10. 1 inchginger cut into pieces
  11. 3 tablespoonscooking oil,two tsp of butter
  12. 1/2 tspred chilli powder, a pinch of garam masala, 1/4 tsp turmeric powder, 1 tsp coriander and cumin powder
  13. 1/2 tspcumin seeds, 1 tsp dried fenugreek leaves, black salt and common salt according to taste
  14. 2 tablespoonseach of butter and cream

Cooking Instructions

    Take a cooking pan and heat it on medium flame. Add 2 tsp oil and add onion and fry with little salt, cover the pan and leave the onion to cook till it become soft. Add ginger and garlic pieces and cashew nuts and sauté. Cover the pan for two minutes.

    Add cut tomatoes and cook till tomatoes become pulpy. Add chilli powder, turmeric, garam masala, coriander, cumin powder and salt. Cook for a minute then remove in a bowl and cool.

    Add one tsp oil in same pan and add paneer pieces. Sauté for a min and take out in a plate.

    Add 2 tsp oil to the pan and add cumin seeds, French beans and sauté and cover for a min.

    Add carrot cubes and sauté. Cover for a minute.

    Add cauliflower and peas to the pan. Cover and cook. Add little salt cook for two minutes.

    Now place the cooled masala mix in a grinder and grind it to smooth paste, adding little water.

    Add 2 tsp oil and one tsp butter in the pan. Add masala paste and cook. Add black salt and cook for five minutes, stirring continuously on slow flame.

    Add cooked vegetable and paneer and cook again for two minutes or till vegetables become soft.

    Add dried fenugreek leaves, little butter and cream. Our mix vegetable with paneer in orange gravy is ready. Now take out the vegetable in a serving bowl, sprinkle little dried fenugreek leaves and cream.

    Serve this yummy vegetable with Roti, paratha, Puri, Naan or Rice.
