Ingredients

  1. 1 can (29 ounce)100% Pumpkin
  2. 1 can (15.5 ounce)black beans, undrained
  3. Olive oil
  4. 1onion, chopped
  5. 1green pepper, chopped
  6. 10garlic cloves, minced
  7. 1/8 teaspoonblack pepper
  8. 1/8 teaspoonsalt
  9. 2 cartons (32 ounces)low sodium chicken stock
  10. 1 bag (24 ounces)red mini potatoes, cut in half
  11. 2 cans (14.5 ounces)diced tomatoes
  12. 1 bag (9 ounces)fresh spinach
  13. 1 can (6 ounce)tomato paste

Cooking Instructions

    In a large stockpot heat some olive oil ………

    Sauté your chopped onion, green pepper and minced garlic until tender ……

  3. 3

    Add to stockpot your black pepper, salt, chicken stock, red mini potatoes and boil until potatoes are tender……..

    Next add in your diced tomatoes, black beans, pumpkin and tomato paste, boil for about 10 minutes, then add your spinach and cook until spinach is wilted ……
