Since I don't really like pickles, I came up with this side dish as an alternative.

Ingredients

  1. 1Cucumber
  2. 2 tspMiso
  3. 1Grated ginger
  4. 1 tspSugar
  5. 1 dashSesame oil
  6. 1 dashRed chili pepper

Cooking Instructions

    Peel off the skin from the cucumber in random places. Cut into bite-sized pieces, then put them in a plastic bag.

    Alternatively, after peeling the skin, put the cucumber in a plastic bag, then break it up with your hands. Then, pound it with a rolling pin or similar utensil until it breaks up into bite-sized pieces.

    Add all of the seasonings to the plastic bag.

    Work in the seasonings by massaging the bag from the outside, then let it sit for 2-3 minutes. Once the seasonings blend in, transfer to a dish, and garnish with slices of red chili pepper. Serve immediately.
