Lickity-Split Cocoa Cake with Cream Cheese Frosting

In the mood for some chocolate cake, but don’t want a full-size one? Then this is the recipe for ya! It’s chocolaty goodness hits the spot where hankerin’ sits. Eat it with or without frosting, drizzle or glaze. Personally, I prefer a bit’o drizzle over the top, it gives it a lil “umpf”. Enjoy! #GlobalApron 2024

Ingredients

35-40 minutes
6-8 servings
  1. 1-1/2 cupsunsifted all-purpose FLOUR
  2. 1 cupsugar
  3. 1 tspbaking soda
  4. 1 cupunsweetened cocoa
  5. 1 cupwater
  6. 1/4 cupplus 2 Tbsp vegetable oil
  7. 1 Tbspwhite vinegar
  8. 1 tspvanilla
  9. 1/2 tspsalt

Cooking Instructions

35-40 minutes

    Preheat oven to 350*.
    Grease and flour 8”-9” baking pan or use some *Cake pan mousse (see my recipes); set aside

    Combine flour, sugar, baking soda and salt in large mixing bowl. Add water, oil, vinegar and vanilla; stir with wooden spoon or whisk just until batter is blended.

    Pour into prepared pan. Bake 35-40 minutes or until cake tester comes out clean. Cool in pan. Frost or not. Enjoy!

    Cream Cheese Frosting: Beat 1 package (3 oz) softened cream cheese, 1/4 cup softened or margarine in small bowl until smooth and well blended. Gradually add 2 cups sifted powdered sugar, stir in 1 tsp vanilla. Beat till smooth. Frost cake after it’s completely cooled.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
