Ingredients

  1. 3 cupgrated carrots
  2. 2 cupall-purpose flour
  3. 2 cupwhite sugar
  4. 1 1/2 tspbaking soda
  5. 1 tspbaking powder
  6. 1/2 tspsalt
  7. 1 tspground cinnamon
  8. 4large eggs
  9. 1 cupcooking oil
  10. 1/2 canpineapple crushed with the juice
  11. 3/4 cupchopped pecans
  12. 1 1/2 tspvanilla
  13. 2 tbspcornstarch
  14. for cream cheese frosting
  15. 1 packagecream cheese
  16. 2 cupicing sugar
  17. 1/2 cupbutter softened
  18. 2 tspfresh lemon juice / vanilla extract

Cooking Instructions

    Preheat oven to 350°F. Grease and flour pan.

    In large bowl combine grated carrots, flour, corn starch, baking soda, baking powder, salt, pecan, and cinnamon.

    Mix eggs for a minute, pour sugar in, cooking oil, pineapple crushed, vanilla, and carrots mixed, Spoon batter into prepared pan.

    Baked in the preheated oven for 40 to 60 mnt, or until a toothpick inserted into the center of the cake comes out clean.

  5. 5

    To make frosting : combine cream cheese, and butter mix well. Add icing sugar, and lemon into the bowl, beat until smooth.
