  1. 2 cupsAll purpose flour -
  2. 3Eggs -
  3. 1 1/2 cupsSugar powder -
  4. 1 1/2 cupsOil -
  5. 2 cupsCarrot -
  6. 2 cupsDates -
  7. 1/2 cupKismis -
  8. 1 tspcinnamon nutmeg Cloves , & ground together -
  9. 1 1/2 tspsBaking soda -
  10. 1 tspVanilla essence -
  11. 1/4 cupBrandy rum / -
  12. 1/4 cupRed wine -
  13. 1/2 cupMilk - if needed

Cooking Instructions

    Chop the dates and kismis and measure.Add the rum/ brandy and the wine to this & soak this for atleast 4 days prior (up to 2 weeks) to making cake.

    Sieve together the flour, baking soda and the spices.set this aside.

    Seperates the yolk & white of the eggs. To the yolk add the sugar and beat till pale.add the oil and  vanilla & beat.

    Mix in the soaked fruits and chopped carrots along with the sieved flour to this.if you think the batter will be thick after adding the whipped egg whites,add the milk as required.

    Beat the egg whites till stiff peaks form.Fold in the batter gently.Pour in two 9 " baking pans/3 loaf tins.Bake in a preheated oven at 160 C for 40-60 minutes or a skewer inserted at the center comes out clean. The time may vary with the pans used & type of oven.
