1/2 cupsoften butter

1 tspvanilla
2 1/2 cupall-purpose flour
1 tspbaking soda

1 tspsalt
1/2 cupbuttermilk

Cooking Instructions

Preheat oven to 350°. Mix sugar and butter, then add in eggs.

Then add the bananas, buttermilk, and vanilla.

Blend until smooth, then add in flour, baking soda, and salt.

Bake in an 8 inch pan for an hour

Made this and it did not turn out! Baked it for one hour and it was still mush on the inside. Already pretty brown on top so I covered it and continued baking for another 40 minutes, still not done in the center!! Maybe too much buttermilk!!! Will try again with less.

I usually double this recipe, making 1 loaf and 1 batch of muffins. The recipe is very versatile. You can add more banana if you'd like to increase the banana flavor. I have also made it with add-ins (choc. chips, dried cranberries, chopped walnuts). Stir in after flour.
