Shortbread cookies are a favorite of my husbands, so I am always looking for new ways to jazz them up. Toffee and coffee are also favorites so I added some toffee to the cookie dough, and for the centers made a soft coffee ganache. The center stays soft and creamy which turned out to be the best part! These cookies freeze really well too, so are great to have on hand and sneak in for a lunch surprise treat!

These cookies are tender shortbread thumbprint cookies accented with toasted coconut and filled with a creamy chocolate mousse. All the components come together to provide a crisp outer toasted coconut cookie with the tender buttery shortbread abd a creamy soft chocolate mousse center.

Remember shortbread cookies are not a sweet cookie. Note: I do not have a mixer & I used a blender.

I had been making these cookies almost every Christmas since I was a child. My youngest daughter now makes them. You can use sprinkles to decorate the cookies.
