Mango icebox cake is one of the famous dessert that my family like. It's a layer of graham crackers, sweetened cream and ripe mango. Normally served chilled or frozen.

Peel skin-off the mango. Cut-off some flesh near from the pit. Slice the flesh thinly into lengthwise. Cut the remaining mango into cubes for toppings. Transfer to a bowl and set aside until ready to assemble.

In a bowl, beat chilled cream using stand mixer until it doubles in volume. Slowly add-in condensed milk, and salt until well-blended.

Arrange a single layer of graham crackers in the bottom of your preferred container. Pour 1-2 cups of cream mixture and spread evenly. Top with sliced mango. Repeat to make another layer. For the final/last layer, arrange crackers on top of the sliced mango, and spread the remaining cream mixture. Top with diced mango and some crushed crackers.

Regrigerate for 4 to 6 hours until the cream sets.

Transfer to freezer for 8 hours or overnight. Let it thaw for a few minutes before slicing.
