Sweet and Spicy Roasted Butternut Squash

Ingredients

  1. 1 teaspoonblack pepper
  2. 1 teaspoonsalt
  3. 1 teaspoonpumpkin pie spice
  4. 1 teaspoononion powder
  5. 1 teaspoongranulated garlic
  6. 1 teaspoonsmoker paprika
  7. 2 tablespoonsbalsamic vinegar
  8. 2 tablespoonsolive oil
  9. 2 tablespoonsbrown sugar
  10. Pinchtwo of cayenne pepper optional
  11. 1\2 cup of maple syrup
  12. 1peeled and cubed butternut squash

Cooking Instructions

    Line baking pan with foil. Coat foil lightly with olive oil. Peel butternut squash, cut into 1 inch cubes. Toss and coat squash in seasoning mixture and spread out on foiled and greased pan. Roast 25 mins in a *375 degree oven and turn/flip squash. At this point I mixed another 1 tbls Olive Oil, 1 tbls balsamic vinegar and 1 tbls brown sugar together and poured onto the squash. I sprinkled cayenne, (which is optional) and baked another 15-20 or until tender and nicely browned.

I actually am not terribly fond of cooking, (I know, right? Wrong place here) but love to eat new things that aren't processed and like to try my spin on recipes or cook off the cuff. I do some full fat cooking and low carb cooking but the cooler months I love to make sweets! My husband truly enjoys my cooking but hates when I make something the first time and off the cuff but never write it down and the second time it's never as good so hopefully using cookpad will help.PS- Not here to hook-up and trust me, you can't catfish me.
