Cooking Instructions

Wash the aya thoroughly to remove any sand then soak it over night.

Pour out the water and put fresh water which will be used for grinding. Deseed the dates (dabino), grate or cut the coconut into small pieces and add it to the tiger nut.

Take it for grinding in a very clean grinding machine or if you have a good blender, blend it till you get a smooth paste

Get a cheese/muslin cloth (abun tatan kunu), then add two cups of water to the paste and sieve the grinded tigernut with the cloth making sure to press out all the juice. Sieve twice preferably so as to ensure no rough bits got through the first time. Throw away the chaf remaining in the cloth. I dont add much water because i dont want it too watery and i wont add sugar.

Serve chilled. If not refrigerated, it should be consumed in a day otherwise, it should be kept frozen. It doesn't keep for more than a day outside the fridge.

This recipe uses 100% whole grain oats and homemade apple sauce. In order to make them more digestible, I substitute two eggs with fresh grounded flax seeds. Minimal amount of brown sugar (2 tablespoons for 12 muffins) is added to enhance the flavor but you may skip it because Jackfruit is a natural sweetener. Although no dairy products are added, this vegan version of muffins surprisingly smell and taste with buttery aroma with crunchy rolled oats texture. This bread is good and good for you. I use white wheat which I find to be much yummier then the normal wheat flour which is red wheat. Mix and match the additional fruit item or leave it out all together. I am a sugar skimper but know if it is not sweet enough only I will eat it.
