Ingredients

  1. Ingredient A:
  2. 2 cupsall-purpose flour (about 250 grams)
  3. 1 cupgranulated sugar or powdered sugar (about 200 grams)
  4. 2 teaspoonsbaking powder
  5. 1 teaspoonbaking soda
  6. 1/2 teaspoonsalt
  7. Ingredient B:
  8. 2large eggs
  9. 1/2 cupvegetable oil (about 115 ml)
  10. 1/2 cupwhole milk (about 115 ml)
  11. 1 teaspoonvanilla extract
  12. 1 teaspoonlemon juice (I skipped this)
  13. 1 cupmashed ripe bananas (about 250 grams)
  14. Optional:
  15. 1 teaspoonground cinnamon

Cooking Instructions

    Combine all of Ingredient A or the dry ingredients, and add the ground cinnamon. Mix well. Set aside.

    Mash the bananas. I use a fork, so it's not too smooth, but that's okay. Then mix in the eggs, milk, oil, and vanilla extract (all of Ingredient B or the wet ingredients). Stir until just combined, don't overmix to avoid a dense cake.

    Pour the wet mixture (B) into the dry mixture (A). Use a whisk; it's a bit heavy, so you can use a spatula. Mix until just combined. Don't overmix.

    Pour into a pan greased with margarine and dusted with flour. Add chocolate chips on top as a topping. Bake in a preheated oven for about 45 minutes. I use a traditional oven, as usual, on medium heat.
