I like bread with yogurt in the dough, so I used plain yogurt instead of water to make these bagels.I usually set the oven to 220℃, but this time I tried it at 230℃.When shaping the bagels, make sure to fold in and secure the seams well so that they don't open up.Because the yogurt helps the dough to rise as well, I reduced the amount of yeast that I used in my other bagel recipe by 1 g. Depending on where you were born and grew up, and where you leave now, the seasonal dishes that adorn your table may be sweet, savoury, sweet and sour or a little bit of sugar and a little bit of spice and all that is nice.When my kids came visiting, I made this creamy, crunchy, crumbly, scrunchy Pomegranate and Walnut Parfait. The recipe is Persian but I am sure it is inspired by the American Parfait. I used Walnuts as I have a really wonderful stash of walnuts from Kashmir. So, this is how recipes change and take different shapes and flavours when each one of us improvises with local ingredients. Instead of whipped cream, I used Greek yoghurt which is healthier and easier to use.For this pomegranate parfait, I have used plain yoghurt and condensed milk. Pre-sweetened yoghurt does not give the same taste. Once you find your favorite one, use it to duplicate that yoghurt at home.Buy a small cup of your favorite plain greek yoghurt, this recipe shows you how to turn that one cup into 6-7 cups of thick, fresh lucious greek yoghurt overnight, and 1-2 cups of “Bokashi Whey” using just two quarts/ liters of full milk. This recipe helps calibrate your baking oven, if you dont have a thermometer, and keeps the milk from scalding the bottom of your dutch oven. Two recipes in one. To make yogurt just drain it for an hrs after it’s done. For Greek yogurt, drain it in the refrigerator overnight. There is no sugar or fruits added, can add all that stuff later as needed, I didn’t want my big batch to be just one flavor, I wanted to use it For different things, like (To make a flavor batch just get the flavor yogurt with live culture, like vanilla for example )for cooking, so it’s all plain . I made yogurt and I took the other half and made Greek yogurt. If you don’t want a big batch I put that in here too. When making this , do not peek at it, or remove lid at anytime. The only time this lid comes off is the step where you add the starter yogurt and that’s it, I can’t stress this enough as it will not work if that lid comes off , even for a sneak peek and you wasted all that time. There is nothing to making just time. If you have other people in the house when this is being made, make sure everyone knows not to touch it , or remove that lid, or the towel in that last step, if you have to put a do not touch note on it. I watched 3 videos on how to do this before i attempted this , I will put them in the notes below for anyone who wants a better understanding before trying this. I highly recommend watching them , the first one is about 8 mins the other one is 19 mins long. 🌈NinjaMommaKitchen🌈 -
