Eggplant Rice Bowl with Sweet and Savory Sauce Eggplant Rice Bowl with Sweet and Savory Sauce
I love eggplants. While I was thinking of dishes to prepare with one of my favorite sweet and savory sauces, this was what stuck! If the skin of the eggplant is tough, peel off some strips in a zebra pattern to make it easier to bite into. Once you add the sauce ingredients it will cook down in no time, so make sure to simmer over low heat. Recipe by pappatyan. cookpad.japan -

Eggplant, Bell peppers and Chicken with Sweet and Sour Sauce Eggplant, Bell peppers and Chicken with Sweet and Sour Sauce
Green bell peppers and eggplant were in season this summer and autumn in my garden!I added some chicken breast that was on sale for around 100 yen ($1) to make dinner! It looks like sweet and sour pork so I cooked it using a similar sauce. It'll taste better when cooled if you use just a small bit of sauce. It's delicious in bento, too!-It's nice even without doubanjiang spicy bean paste!-Substitute chili oil or ichimi togarashi (japanese red chilli pepper) for the doubanjiang spicy bean paste.-Adding extra bamboo shoot, carrot, onion and shiitake mushrooms would be perfect. Like sweet and sour pork!-Do not stir fry the bell peppers too long or they'll lose their crunchiness.-Reduce the sauce at the end so that ketchup and vinegar are less acidic. Sweet and Sour Pork Style Meatballs with Thick Sweet-Vinegar Sauce Sweet and Sour Pork Style Meatballs with Thick Sweet-Vinegar Sauce
I don't like sweet and sour pork made with deep fried pork, so at some point I started using easy to make meatballs instead. I've also settled on this light soy sauce flavored sauce rather than the usual ketchup flavored one.*Adjust the amount of meatballs you add to taste.*By mixing the katakuriko with the flavoring ingredients beforehand, you can prevent lumps from forming in the sauce.
