Was craving pasta & craving soup at once when I found this gem! I used different seasonings & amounts than the recipe called for. I also used more than just 8 oz of pasta and it was still great, not a drop of leftovers!

Ingredients

  1. 1 lbhot sausage
  2. 1 lbground beef
  3. 2small yellow onions, chopped
  4. 4 clovesgarlic
  5. 6 oztomato paste
  6. 6-8 ozMafalda Pasta (or pasta of your choice)
  7. 2 (14.5 oz)cans Diced Tomatoes (I used Italian Style), drained
  8. 8 cupschicken broth
  9. Italian Seasoning (I used Oregano)
  10. Crushed Red Pepper Flakes
  11. Salt
  12. Black Pepper
  13. Garlic Pepper (optional)
  14. Onion Powder (optional)
  15. Cheese Topping
  16. 8 ozRicotta cheese
  17. 2 ozparmesan cheese
  18. 2 ozshredded Mozzarella

Cooking Instructions

    In a large soup pot sautee the onions & garlic. Add ground beef and sausage, season well with seasonings.

    When meat is cooked (drain, if needed) add diced tomatoes, tomato paste, & chicken broth. Turn to high heat until simmering.

    Once simmering add pasta and turn heat down to medium. Stir and simmer until noodles are soft, about 8-10 minutes.

    Taste the broth!! Add seasonings as needed.

    In a separate bowl add cheese ingredients and mix well.

  6. 6

    Add cheese mixture to individual bowls, not the pot itself. Enjoy!
