A hot Winter treat with simple ingredients on hand

Ingredients

1 hr - 1.5 hrs
4 as dinner.
  1. 1 poundlean ground beef
  2. 2carrots peeled and sliced
  3. 2 stalkscelery sliced
  4. 3/4onion diced
  5. 15 ouncecan tomato sauce
  6. 15 ouncecan diced tomatoes
  7. 1 cancorn
  8. 1 cancut green beans
  9. 2 cans (4 cups)beef broth
  10. 2 cupschicken stock
  11. 2 clovesgarlic crushed
  12. 1bay leaf
  13. 1 tspItalian seasoning
  14. 1/2 tspparsley dried
  15. 1/2 tspcrushed red pepper
  16. 2medium new potatoes unpeeled and cubed 1/2 inch
  17. 2 Tbsbacon fat
  18. 2 Tbsolive oil
  19. 2 Tbsbutter
  20. S & P to taste
  21. 2 TbsWorchestershire
  22. 1 TbsKinder buttery garlic seasoning

Cooking Instructions

1 hr - 1.5 hrs

    Brown ground beef in bacon fat. Drain and set aside

  2. 2

    In soup pan add red pepper, olive oil and over medium heat saute 1st carrots, then celery, then add onion and butter. Cook until carrots are tender

  3. 3

    Add potatoes, all tomatoes, broth, stock, crushed garlic, bay leaf and remaining seasoning. Cook stirring occasionally over medium heat until potatoes are tender.

    Add beef, corn and beans (drain both) and adjust S&P. Simmer 15 minutes before serving
