  2. 100 gcottage cheese or feta flavored with herbs
  3. orange juice and lemon vinaigrette■■■
  4. 2 tablespoonorange juice
  5. 1 tablespoonlemon juice
  6. tablespoonolive oil
  7. pinchthyme
  8. salt
  9. black pepper
  10. pinchorange zest
  11. leavesbasil
  12. your choice of roasted peanuts or pistachio or walnuts

    Cut the beetroot thin slices with a leaf cookie cutter.

    Put flavored cheese between the leaves and scour the basil leaves
