Ingredients

  1. 1/2 cupsdark brown sugar
  2. 1/2 cupgranulated sugar
  3. 1 cupvegetable oil
  4. 4large eggs
  5. 1 teaspoonpure vanilla extract
  6. 2and 1/2 cups all-purpose flour
  7. 2 teaspoonsbaking powder
  8. 1 teaspoonbaking soda
  9. 1/2 teaspoonsalt
  10. 1and 1/2 teaspoons ground cinnamon
  11. 1 teaspoonground ginger
  12. 1/4 teaspoonground nutmeg
  13. 2 cups (260 g)grated carrots (about 4 large)

    Turn the oven up to 350°F (177°C). Grease two or three 9-inch cake pans, line with parchment paper, then grease the parchment paper

    Whisk the brown sugar, granulated sugar, oil, eggs, and vanilla together in a large bowl until combined. In another large bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg together and set aside

    Pour the wet ingredients into the dry ingredients and, using a rubber spatula or wooden spoon, fold the ingredients together until just combined. Fold in the carrots

    Pour the batter evenly into the cake pans. If using three cake pans, bake for 20-24 minutes. If using two cake pans, bake for 30-35 minutes. Test the center with a toothpick. If it comes out clean, the cakes are done.

    Allow the cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before you serve except you love eating hot cake 😅
