Easy Shiro-dashi Sushi Vinegar in a Microwave

I wanted to simplify my recipe for sushi vinegar easily, so I used shiro-dashi that I always have in my kitchen.
For the sugar, use castor sugar or granulated sugar, which melt easily and won't color the sushi vinegar.
If you prefer a sweeter flavor, use 1.5 to 2 tablespoons of sugar.
If you are adding denbu (sweet fish flakes) to the sushi rice, use less than 1 tablespoon of sugar. Recipe by vegeful

If you use shiro-dashi, it will create a lighter color for a beautiful result. I also tried making it with light soy sauce. It's similar to a non-oil marinade? That's the image. You can optionally add sliced chili pepper to the nanban sauce. I didn't add it because I wanted my children to eat this. Using about 1cm of oil when frying the fish should be enough so that it doesn't become dirty after the first use. If you prefer tender vegetables, microwave them to soften them before using. This is a staple in our house. When preparing a batch of sushi rice, use 80 ml of rice vinegar, 2-3 tablespoons of sugar and 1 teaspoon of salt for 3 rice cooker cups of rice (480 ml), and it will have just the right amount of sweetness. If you dissolve the sugar while heating the vinegar, the vinegar flavor will dissipate and become weak, so let the sugar dissolve naturally. The vinegar sauce is not that sweet.
