  • 2tbsp, chopped (or 1 tbsp dried) Fresh cilantro
  • 1/4 tspBlack pepper
  • 1/4 tspSalt
  • 1 tbsp(optional) Olive oil
  • 2 tbsp (30 ml)White balsamic vinegar
  • 1, cubed Ripe avocado
  • 1/4 cup(60ml), thinly sliced Red onion
  • 1/2, sliced Cucumber
  • 1/2 cup(120ml), shredded Red cabbage
  • 2 cups(480ml), chopped Baby crispy green leaf lettuce
  • pinchBlack pepper
  • 1/4 tspSalt
  • 1/2lemon (about 1 1/2 tbsp, for dressing) Lemon juice
  • 1/2 lb(225g), cut into 3 pieces Salmon fillet
  • 1/4 cup(60ml), finely chopped Red onion
  • 1, diced Medium tomato
  • 1/2, diced Cucumber
  • 1, diced Ripe mango
  • 1 1/2 tbsp(22ml, for searing) Coconut oil
  • 1/4 tspSalt
  • 1/4 tspBlack pepper
  • 1 tspDried parsley
  • 1 tspMushroom seasoning (Badia)
  • 1 tspDried basil
  • 1 1/2 tbsp (22 ml)Coconut aminos

    For salsa, mix mango, cucumber, tomato, red onion, and cilantro in a bowl.

  2. 2

    Add lemon juice, salt, and pepper. Toss gently and chill.

  3. 3

    Pat salmon dry. Rub with coconut aminos, basil, mushroom seasoning, parsley, salt, and pepper.

  4. 4

    Heat coconut oil in skillet over medium-high. Sear salmon 3–4 min per side, basting with oil.

  5. 5

    For salad, combine lettuce, red cabbage, cucumber, red onion, and avocado in a bowl.

  6. 6

    Drizzle with white balsamic vinegar (and olive oil if using). Season with salt and pepper. Toss lightly.

  7. 7

    Serve salmon topped with salsa, salad on the side.
