I tried substituting burdock root for the lotus root that I always use.

Ingredients

3 servings
  1. 300 gramsGround pork
  2. 15cm Burdock root
  3. 1/2Onion
  4. 1Egg
  5. 2 tsp☆Katakuriko
  6. 2 tsp☆Soy sauce
  7. 2 tsp☆Sake
  8. 1 tsp☆Grated ginger
  9. 1 tsp☆Sesame oil
  10. 1 dash☆Salt and pepper
  11. 1 tbsp◎Sugar
  12. 1 tbsp◎Mirin
  13. 1 tbsp◎Sake
  14. 2 tbsp◎Soy sauce
  15. 3to 4 Shiso leaves

Cooking Instructions

    Wash the burdock root, and finely shave it with the skin still attached. Finley chop the onion.

    Add the ground pork, onions, burdock root, eggs, and flavoring ingredients marked with ☆ to a bowl and knead thoroughly until it sticks together.

    Mold the patties into any size you like, line them in a heated pan, and fry. Once it has become golden brown on one side, flip them over, cover with a lid, and continue cooking for another 4-5 minutes.

    Wipe excess oil with a paper towel.

    Mix together the ingredients marked with ◎, and add them to the pan once the patties have cooked through. Saute them while shaking the pan back and forth. Turn the heat up to high after adding the sauce!

    Transfer to serving plates, top with shredded shiso leaves, and enjoy!
