This recipe is modified from cooks illustrated to include a bit more sauce and a bit more heat in the form of chipotles. Don't skip the sugar in the rub as it aids in crisping and carmelizing the edges of the chicken.

Ingredients

  1. BBQ Sauce
  2. 1/2onion, diced
  3. 1 cupketchup
  4. 1/2 cupmolasses
  5. 4 Tbspworchestershire sauce
  6. 4 Tbspcider vinegar
  7. 4 Tbspmustard
  8. 1/2 tspliquid smoke
  9. 1 tspgarlic powder
  10. 1 tspblack pepper
  11. 1chipotle in adobo, chopped
  12. 1/4 cupfrozen raspberries
  13. Chicken
  14. 2 lbsboneless skinless thighs (8)
  15. 2 tspkosher salt
  16. 4 Tbspfavorite rub
  17. 2 Tbspsugar
  18. 4-8 slicesbacon

Cooking Instructions

    Add all the BBQ sauce ingredients to a small sauce pot and bring to a simmer. Blend with a stick blended until smooth and then retain on simmer while you prepare everything else.

    Add the bacon to a food processor and processor until its a smooth paste.

    Cut the chicken into bite size chunks and then season with the salt and toss. Add the bacon paste on top and let sit while you start the grill.

    Heat a grill to 450F over direct heat.

    Add the seasoning and sugar to the chicken and with gloves hands mix the chicken until coated.

    Skewer the chicken in a tight bunch.

    Grill over direct heat 3-4 minutes per side until the edges begin to crisp. Baste with copious sauce and turn once more until the sauce caramelizes. Remove to a platter, and rest 10 minutes. unskewer and serve as bite size chunks.
