Why do we use cornicabra extra virgin olive oil from Spain for this recipe? We have choosen cornicabra extra virgin olive oil because it's highly aromatic, with notes of fruity olive and other fruits including apple. Herbal olive leaf notes can be appreciated on the palate, with a slightly bitter taste.

We still in the 100s (Cali). Just something to stay refreshed.
