This classic French-style beef stew is the ultimate one-pot dinner. With time the meat becomes fall-apart tender in a rich sauce, for a satisfyingly tasty beef

Ingredients

  1. Beef Chuck Steak, cut into 4cm chunks
  2. 2 tbspolive oil (I use sunflower oil)
  3. 1onion, chopped
  4. 3 tbsptomato paste
  5. 2 tspsweet paprika
  6. 1 tbspplain flour
  7. 1 1/2 cupsbeef stock
  8. 150 gbutton mushrooms, quartered (optional)
  9. 2carrots, peeled and thickly sliced
  10. 1 kgIrish potatoes, peeled, cut into 4cm chunks
  11. 200 ggreen beans,
  12. Red chill pepper

Cooking Instructions

    Heat half the olive oil

  2. 2

     in a large saucepan and cook beef over high heat until well browned.

  3. 3

    Transfer to a plate. Reduce heat to medium and add remaining oil and onion. Cook for 5 mins, until soft. Add tomato paste and paprika and sprinkle flour over. Cook, stirring, for 1 min. Gradually add stock, stirring constantly.

    Return meat to the pan, cover and bring just to the boil. Reduce heat to very low and cook gently, covered, for 1 hour. Add mushrooms, carrot and potato. Replace lid and cook for 45 mins then add beans and cook a further 15 mins.
