My favorite childhood treat. Best eaten fresh within a few days of being made

Line a baking sheet, or baking dish with parchment paper, set aside

Pour sugar, water, corn syrup, and honey into a medium sauce pan. DO NOT STIR!

Bring to a boil and cook till 300° F or the hard crack stage on a candy thermometer

Remove from heat and add the baking soda, stir vigorously until well combined and frothy

Pour onto lined pan or baking dish.

Let rest until Completely cooled. Approx 30 min

Remove from dish and crack it down to the desired sized pieces

Melt chocolate in a double boiler, or microwave for 30 sec, stir, and repeat every 15 sec until melted. Don't over cook or it will burn

Cover 1/2-all of the pieces with semisweet chocolate

Let the chocolate harden. Putting it in the freezer with speed up this process
- 11
Make sure to store in air tight container to prevent it softening from moisture. Even better if it is vacuum sealed
