  1. 4 1/2 lbsspinach (about 2 kg)
  2. 1 bunchdill
  3. 1 bunchgreen onions
  4. 3leeks
  5. 1 lbfeta cheese (about 1/2 kg)
  6. Olive oil
  7. 10 sheetsphyllo dough
  8. Salt and pepper

    Sauté the spinach, dill, green onions, and leeks in olive oil in a large pot. Cook until the spinach wilts and most of the liquid evaporates. Season with salt and pepper.

    Remove from heat and stir in the crumbled feta cheese.

    Layer 5 sheets of phyllo dough on the bottom of a baking dish, brushing each sheet with olive oil. Add the spinach filling, then layer the remaining 5 sheets of phyllo on top, brushing each with olive oil. Fold any overhanging dough inward. Sprinkle a little water over the top to help the crust get crispy.
