Bruschetta Caprese Chicken over Bowtie Pasta

Ingredients

4-6 people
  1. Chicken
  2. 2 lbsChicken Boneless Breast (Skin on or off your prefference)
  3. 3 tbsOlive Oil
  4. 3 tbsButter
  5. 4or up to 40 Fresh Garlic Cloves
  6. 16 ozFresh Mozzarella
  7. Salt & Pepper
  8. Bruschetta
  9. 2 cupsChopped Roma Tomatoes
  10. 1/2 cupChopped Red Onion
  11. 2-20Chopped Fresh Garlic Cloves
  12. 2 tbsFresh Basil
  13. 1 tbsBalsamic Vinegar
  14. Pasta
  15. 16 oz Bow Tie Pasta
  16. 2 tbsOlive Oil
  17. 2 tbsButter
  18. At The Table
  19. Balsamic Vinegar Reduction
  20. Fresh Shredded Parmesan Cheese

Cooking Instructions

    Slice roma tomatoes in half and remove the seeds and liquid. Chop roma tomatoes.

    Chopped red onion into pieces just smaller than the roma tomatoe pieces.

    Finely chop or crush garlic and mix with onions and tomatoes in a small bowl. Chiffonade basil and add to bowl. Add balsamic vinegar and mix. Set aside.

    Butterfly or slice chicken in half lengthwise so that chicken breast are even in size and no more than 1/2 to 3/4 inch thick. Generously season both sides of each breast with salt and fresh cracked pepper. Set aside.

    Cook pasta per package instructions. When done drain and set aside.

    Heat large pan to medium to medium high heat. Add olive oil and butter to pan. Place chicken breasts in pan add as many whole garlic cloves as you like to pan with chicken. When chicken browns on first side flip over and cook till internal temp of 165 ℉. Turn garlic periodically to brown on all sides. You may have to cook chicken in batches. Just add more olive oil & butter as needed. Remove cooked check from pan and reserve liquids in pan.

    Add olive oil & butter to chicken pan and cook pasta till just slightly crispy.

    While pasta is cooking in pan. Place chicken breasts on cookie sheet or broiler pan. Put slices of fresh mozzarella on each chicken breast and melt cheese in broiler.

    To serve: Place pasta on plate. Add bruschetta over pasta. Place chicken breast on top. Top with fresh shredded parmesan cheese, pan roasted garlic cloves, and additional fresh basil if desired. Drizzle balsamic reduction over all.
